Ingredients

4 cod fillets (about 6 oz each)

2 medium potatoes, peeled and diced
 - 
1 cup heavy cream
 - 
2 tablespoons butter
 - 
2 teaspoons fresh rosemary, chopped

1 clove garlic, minced
 - 
1 tablespoon olive oil
 - 
Salt and pepper to taste
 
Instructions

Heat olive oil in a skillet over medium heat and cook diced potatoes until golden and tender, about 8-10 minutes.

Remove potatoes from the skillet and set them aside.

In the same skillet, melt butter over medium heat. Add minced garlic and chopped rosemary, cooking for 1-2 minutes until fragrant.

Add heavy cream to the skillet and simmer, stirring occasionally, for 3-5 minutes until the sauce thickens slightly.

Season cod fillets with salt and pepper. Place the fillets into the skillet with the rosemary cream sauce. Cook for 4-5 minutes on each side, or until the cod is flaky and cooked through.

Serve the cod fillets over the crispy potatoes, drizzling the rosemary cream sauce on top.
 
Notes

You can substitute the cod with another white fish like haddock or tilapia if preferred.
