A delicious and comforting dish, Cod & Potatoes in Rosemary Cream Sauce combines tender cod fillets with crispy potatoes and a rich, flavorful cream sauce infused with fresh rosemary. Perfect for a cozy dinner or special occasion.
Ingredients
-
4 cod fillets (about 6 oz each)
-
2 medium potatoes, peeled and diced
-
1 cup heavy cream
-
2 tablespoons butter
-
2 teaspoons fresh rosemary, chopped
-
1 clove garlic, minced
-
1 tablespoon olive oil
-
Salt and pepper to taste
Instructions
-
Heat olive oil in a skillet over medium heat and cook diced potatoes until golden and tender, about 8-10 minutes.
-
Remove potatoes from the skillet and set them aside.
-
In the same skillet, melt butter over medium heat. Add minced garlic and chopped rosemary, cooking for 1-2 minutes until fragrant.
-
Add heavy cream to the skillet and simmer, stirring occasionally, for 3-5 minutes until the sauce thickens slightly.
-
Season cod fillets with salt and pepper. Place the fillets into the skillet with the rosemary cream sauce. Cook for 4-5 minutes on each side, or until the cod is flaky and cooked through.
-
Serve the cod fillets over the crispy potatoes, drizzling the rosemary cream sauce on top.
Notes
-
You can substitute the cod with another white fish like haddock or tilapia if preferred.
-
For extra flavor, garnish with more fresh rosemary or a squeeze of lemon juice before serving.
