Ingredients

  1. For the Cloud Bread:

    • Eggs: 3 extra-large, room temperature
    • Cream of Tartar: 1/4 teaspoon
    • Cream Cheese: 3 tablespoons (1.5 oz), softened (or substitute with Greek yogurt)
    • Kosher Salt: 1/8 teaspoon

Instructions

  • Prepare the Bowls:
    • Use two medium-sized glass mixing bowls, ensuring they are completely clean and free of residue to help the egg whites whip properly.
  • Preheat the Oven:
    • Preheat to 300°F (150°C) and line a baking sheet with parchment paper.
  • Separate the Eggs:
    • Separate the yolks and whites into the two bowls. Be cautious to ensure no yolk gets into the whites.
  • Whip the Egg Whites:
    • Add cream of tartar to the whites and use an electric mixer to whip on high until stiff peaks form (about 3 minutes). Set aside.
  • Prepare the Yolk Mixture:
    • In the other bowl, whisk together egg yolks, softened cream cheese (or Greek yogurt), and salt until smooth.
  • Combine Mixtures:
    • Gently fold the whipped egg whites into the yolk mixture one cup at a time using a silicone spatula. Continue folding until fully incorporated without deflating the mixture.
  • Shape the Bread:
    • Divide the batter into six even mounds on the parchment-lined baking sheet, spacing them 3-4 inches apart.
  • Bake the Bread:
    • Bake in the preheated oven for 25-30 minutes until the tops are golden brown.
  • Cool and Serve:
    • Let the bread cool on the pan for 5-10 minutes before serving.
