  8. 1½ tsp caster sugar

  9. 1 sprig fresh thyme

  10. ¼ tsp salt (or to taste)

  11. ¼ tsp ground black pepper (or to taste)

  12. 3 tbsp fresh chives & dill, finely chopped (for serving)

  13. ½ cup crème fraîche (for serving)
