- 6 eggs
- 3 1/2 cups flour
- 1 1/2 cups sugar
- 2 tablespoons vanilla or anise extract
- 1 cup unsalted butter, melted and cooled
- 4 teaspoons baking powder
Instructions
- Beat the eggs, gradually adding the sugar. Continue beating until the mixture is smooth.
- Add the cooled melted butter and the vanilla or anise extract to the egg mixture. Mix well.
- In a separate bowl, sift together the flour and baking powder.
- Gradually blend the dry ingredients into the wet egg mixture until the dough is smooth and sticky enough to be dropped by spoon.
- Preheat your pizzelle iron according to the manufacturer’s instructions.
- Drop a rounded teaspoon of dough onto the center of the pizzelle iron. Use your finger or a small spoon to help place it.
- Close the pizzelle iron and cook until the pizzelle is lightly golden. Be careful not to overcook.
- Use a fork to lift the edge of the pizzelle and gently remove it with your fingers. Place flat on a cooling rack. Handle with care to avoid burning your fingers.
- Once cooled, transfer the pizzelle to a plate or store in an airtight container.
- Optional: Dust with confectioners’ sugar, or fill with cream, Nutella, or jam for added flavor.
Notes
- The dough will be sticky but should hold its shape when spooned onto the pizzelle iron.
- Ensure the pizzelle iron is properly preheated before cooking to avoid undercooked or uneven cookies.
- Pizzelle can be stored in an airtight container for up to a week.
