Description
A fresh, vibrant Greek salad made with cucumbers, tomatoes, olives, and feta, tossed in a light olive oil and red wine vinegar dressing.
Ingredients

- 2 cups cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, sliced
- 1/4 cup Kalamata olives
- 1/4 cup green olives
- 1/2 cup feta cheese, cubed
- 1 tbsp fresh parsley, chopped
- 1/4 tsp dried oregano
- Salt & pepper, to taste
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
Instructions
- Slice the cucumbers and red onion. Halve the cherry tomatoes. Cube the feta cheese.
- In a large bowl, combine cucumber, cherry tomatoes, red onion, Kalamata olives, and green olives.
- Add the cubed feta cheese to the bowl.
- Sprinkle with oregano, parsley, salt, and pepper.
- Drizzle with olive oil and red wine vinegar. Toss gently to combine.
Notes
- Use ripe tomatoes and crisp cucumbers for best flavor.
- Chill the salad before serving for a more refreshing taste.
- Add lettuce or chickpeas for extra volume or protein.
