Description

A fresh, vibrant Greek salad made with cucumbers, tomatoes, olives, and feta, tossed in a light olive oil and red wine vinegar dressing.


Ingredients

Scale
  • 2 cups cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, sliced
  • 1/4 cup Kalamata olives
  • 1/4 cup green olives
  • 1/2 cup feta cheese, cubed
  • 1 tbsp fresh parsley, chopped
  • 1/4 tsp dried oregano
  • Salt & pepper, to taste
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar

Instructions

  1. Slice the cucumbers and red onion. Halve the cherry tomatoes. Cube the feta cheese.
  2. In a large bowl, combine cucumber, cherry tomatoes, red onion, Kalamata olives, and green olives.
  3. Add the cubed feta cheese to the bowl.
  4. Sprinkle with oregano, parsley, salt, and pepper.
  5. Drizzle with olive oil and red wine vinegar. Toss gently to combine.

Notes

  • Use ripe tomatoes and crisp cucumbers for best flavor.
  • Chill the salad before serving for a more refreshing taste.
  • Add lettuce or chickpeas for extra volume or protein.
