This decadent, velvety chocolate mousse is the perfect dessert for a romantic evening. Smooth, rich dark chocolate meets airy whipped cream in this indulgent treat that’s as beautiful as it is delicious. Whether you’re treating your sweetheart or yourself, this mousse is sure to impress!

  1. 6 oz dark chocolate, finely chopped
  2. 1 1/4 cups heavy cream, divided
  3. 4 large egg yolks
  4. 1/4 cup granulated sugar
  5. 1 tsp pure vanilla extract
  6. Pinch of salt
  7. Whipped cream, for garnish
  8. Chocolate shavings, for garnish

Instructions

  • Melt the Chocolate:
    In a heatproof bowl, combine the finely chopped dark chocolate and 1/2 cup of heavy cream.
    Gently melt the chocolate mixture by placing the bowl over a pot of simmering water (double boiler method) or microwaving in 20-second intervals, stirring in between until smooth and fully melted. Set aside to cool slightly.
  • Prepare the Egg Mixture:
    In a separate bowl, whisk together the egg yolks, granulated sugar, vanilla extract, and salt until smooth and slightly thickened.
    Heat the remaining 3/4 cup of heavy cream in a small saucepan over medium heat until it starts to simmer.
    Gradually pour the hot cream into the egg yolk mixture while whisking constantly to temper the eggs (this prevents them from scrambling).
  • Combine Chocolate and Egg Mixture:
    Slowly add the tempered egg mixture into the melted chocolate, whisking gently until the chocolate mixture is smooth and well combined.
  • Chill the Mousse:
    Pour the mousse mixture into individual serving cups or bowls. Refrigerate for at least 2 hours or until the mousse is set and firm.

Notes

For an extra touch, top with fresh berries or a dusting of cocoa powder before serving.

Make sure the chocolate mixture is slightly cooled before combining with the egg mixture to avoid curdling the eggs.
