  • 1 cup mushrooms, finely chopped
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup shredded Swiss cheese
  • ¾ cup breadcrumbs
  • 1 egg
  • ¼ cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Optional: extra Swiss cheese for topping

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
  2. In a skillet over medium heat, cook mushrooms, onion, and garlic until softened and moisture evaporates, about 5–7 minutes. Let cool slightly.
  3. In a large bowl, combine ground beef, the cooled mushroom mixture, Swiss cheese, breadcrumbs, egg, milk, Worcestershire sauce, thyme, salt, and pepper. Mix until just combined.
  4. Form the mixture into a loaf shape in the prepared pan or on the baking sheet.
  5. Bake for 45–55 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Optional: In the last 10 minutes, top with additional Swiss cheese and return to the oven until melted.
  7. Let the meatloaf rest for 5–10 minutes before slicing. Serve warm.

Notes

  • Don’t overmix the meat mixture to keep the loaf tender.
  • Use a meat thermometer to ensure perfect doneness.
  • Great served with mashed potatoes or roasted veggies.
