- Juice of 2 oranges (about 4–5 tablespoons) + a bit of zest

- 2 tablespoons white vinegar
- 1 1/2 teaspoons salt
Chicken:
- 1.25 pounds boneless skinless chicken thighs, cut into bite-sized pieces

Optional / For Serving:
- One 8.8-ounce pouch pre-made yellow rice (or homemade)
- One 14-ounce can refried or regular black beans
- 1–2 cups diced pineapple, mango, and/or avocado (optional)
Instructions
- In a bowl, whisk together cilantro, garlic, orange juice and zest, brown sugar, avocado oil, white vinegar, and salt to make the sauce.
- Toss the chicken pieces in half of the sauce to marinate for at least 30 minutes or up to several hours.
- If using skewers, thread chicken pieces onto skewers.
- Cook chicken by grilling, broiling, or pan-searing until cooked through and slightly charred, about 6–8 minutes per side.
- Meanwhile, prepare rice and beans according to package instructions or your favorite recipe.
- Serve chicken over rice and beans, drizzling with the remaining cilantro orange sauce.
- Top with diced pineapple, mango, and/or avocado if desired for a fresh tropical touch.
