Cilantro Orange Sauce:

  • 1/41/2 cup cilantro, finely chopped
  • 2 cloves garlic, grated
  • Juice of 2 oranges (about 45 tablespoons) + a bit of zest
  • 3 tablespoons brown sugar
  • 3 tablespoons avocado oil
  • 2 tablespoons white vinegar
  • 1 1/2 teaspoons salt

Chicken:

  • 1.25 pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • Wood or metal skewers (optional)

Optional / For Serving:

  • One 8.8-ounce pouch pre-made yellow rice (or homemade)
  • One 14-ounce can refried or regular black beans
  • 12 cups diced pineapple, mango, and/or avocado (optional)

Instructions

  1. In a bowl, whisk together cilantro, garlic, orange juice and zest, brown sugar, avocado oil, white vinegar, and salt to make the sauce.
  2. Toss the chicken pieces in half of the sauce to marinate for at least 30 minutes or up to several hours.
  3. If using skewers, thread chicken pieces onto skewers.
  4. Cook chicken by grilling, broiling, or pan-searing until cooked through and slightly charred, about 6–8 minutes per side.
  5. Meanwhile, prepare rice and beans according to package instructions or your favorite recipe.
  6. Serve chicken over rice and beans, drizzling with the remaining cilantro orange sauce.
  7. Top with diced pineapple, mango, and/or avocado if desired for a fresh tropical touch.

  • Marinate the chicken longer for more intense flavor.
  • Swap chicken thighs for breasts if preferred, but thighs stay juicier.
