- 160 g plain white flour
- 250 g white caster sugar
- ½ tsp salt
- 120 g unsalted butter
- 1½ tbsp vanilla extract
- 120 ml soy milk
- 60 g cocoa powder
Instructions
- Preheat oven to 350°F (175°C). Grease and line a baking pan with parchment paper for easy removal.
- In a heatproof bowl, melt chocolate and butter together until smooth, either using a double boiler or microwave in 30-second bursts. Stir in the creamy peanut butter until fully incorporated.
- In a separate mixing bowl, whisk together sugar, flour, cocoa powder, and salt until evenly combined.
- Pour the vanilla extract and soy milk into the melted chocolate mixture and stir until smooth.
- Add the wet mixture into the dry ingredients and gently fold until just combined—do not overmix.
- Pour the thick batter into the prepared baking pan and smooth out the top.
- Bake for 25–30 minutes, until the edges are set but the center is still slightly gooey.
- Let cool completely in the pan before slicing into squares. Enjoy as-is or warm with a scoop of ice cream!
