  • 3 tbsp creamy peanut butter
  • 160 g plain white flour
  • 250 g white caster sugar
  • ½ tsp salt
  • 120 g unsalted butter
  • 1½ tbsp vanilla extract
  • 120 ml soy milk
  • 60 g cocoa powder

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a baking pan with parchment paper for easy removal.
  2. In a heatproof bowl, melt chocolate and butter together until smooth, either using a double boiler or microwave in 30-second bursts. Stir in the creamy peanut butter until fully incorporated.
  3. In a separate mixing bowl, whisk together sugar, flour, cocoa powder, and salt until evenly combined.
  4. Pour the vanilla extract and soy milk into the melted chocolate mixture and stir until smooth.
  5. Add the wet mixture into the dry ingredients and gently fold until just combined—do not overmix.
  6. Pour the thick batter into the prepared baking pan and smooth out the top.
  7. Bake for 25–30 minutes, until the edges are set but the center is still slightly gooey.
  8. Let cool completely in the pan before slicing into squares. Enjoy as-is or warm with a scoop of ice cream!
