Ingredients

Scale
  1. For the Cake:

    • 1 cup flour – All-purpose flour to form the base of the cake.
    • 2 teaspoons baking powder – To help the batter rise for a fluffy texture.
    • 1/2 teaspoon salt – Enhances the sweetness and balances the flavors.
    • 2/3 cup sugar – Adds sweetness to the cake layer.
    • 1 1/2 tablespoons cocoa – Unsweetened cocoa powder for a deep chocolate flavor.
    • 2 tablespoons butter, melted – Provides richness and moisture to the cake.
    • 1/2 cup milk – Helps to bring the batter together.
    • 1 teaspoon vanilla – A hint of vanilla to elevate the flavor.
    • 1/2 cup chopped walnuts (optional) – For an extra crunch (optional).

    For the Topping:

    • 1/4 cup sugar – Adds sweetness to the topping layer.
    • 1/2 cup brown sugar – Brown sugar for a deeper caramel-like flavor.
    • 1/4 teaspoon salt – Balances out the sweetness.
    • 1 tablespoon cocoa – Intensifies the chocolatey taste of the topping.
    • 1 cup boiling water – Pour over the topping to create the pudding-like texture.

Instructions

  • Preheat the Oven: Set the oven to 350°F (175°C).
  • Prepare the Cake Batter: In a medium-sized mixing bowl, combine the flour, baking powder, salt, sugar, and cocoa. Add the melted butter, milk, and vanilla, then mix well to form the batter.
  • Prepare the Pan: Spread the batter into a greased 1.5 qt casserole dish (or a square pan).
  • Make the Topping: In a separate bowl, mix the sugar, brown sugar, salt, and cocoa for the topping. Sprinkle this mixture over the batter in the pan. Do not stir.
  • Add Boiling Water: Pour the boiling water over the top of the cake batter and topping. Do not stir; the water will create a gooey, pudding-like layer beneath the cake.
  • Bake: Bake for 30 minutes, or until the top of the cake is almost set. The cake will rise to the top, and the bottom will form a pudding-like layer.
  • Serve: Serve the chocolate cobbler warm with a scoop of vanilla ice cream. Enjoy!

Notes

  • The cake has a gooey pudding layer beneath it, so be sure to let it cool slightly before serving.
  • If you prefer a more intense chocolate flavor, add a bit more cocoa powder to the cake mix.
  • Walnuts can be omitted if you prefer a smoother texture or have nut allergies.
