  • 3 cups water

  • 1/4 cup natural unsweetened cocoa powder
  • 2 teaspoons instant espresso powder
  • 1 cup whole milk
  • 2 teaspoons vanilla extract
  • 1 cup granulated sugar (for topping)
  • 1/4 cup natural unsweetened cocoa powder (for topping)
  • 1/4 cup packed light or dark brown sugar (for topping)
  • Vanilla ice cream, for serving (optional)

Instructions

  1. Preheat the oven to 350°F. Place 1 stick unsalted butter in a 9×13-inch baking dish and bake until melted, 10 to 15 minutes. Remove from the oven.
  2. While the butter melts, bring 3 cups water to a boil. In a large bowl, combine 2 cups self-rising flour, 1 1/2 cups granulated sugar, 1/4 cup cocoa powder, and 2 teaspoons espresso powder. Whisk to combine, then add 1 cup milk and 2 teaspoons vanilla extract. Stir until smooth. The batter will be thick.
  3. Tilt the baking dish so the butter fully coats the bottom and sides. Pour the batter into the baking dish, spreading it into an even layer. Do not stir.
  4. In a medium bowl, whisk together 1 cup granulated sugar, 1/4 cup cocoa powder, and 1/4 cup brown sugar. Sprinkle evenly over the batter. Do not stir. Pour the boiling water evenly over the batter. Do not stir.
  5. Bake for 30 to 35 minutes, until the top is dry and crackled, and the edges are set with a slight jiggle in the center.
  6. Serve warm with a scoop of vanilla ice cream if desired.
