Description

A flavorful and spicy Chili Lime Chicken with a zesty rub, perfect for grilling or cooking in a skillet. The chicken is marinated with chili powder, cumin, lime juice, and zest for an unforgettable taste.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/41/2 teaspoon chipotle chili pepper (optional for more heat)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon brown sugar
  • Fresh-squeezed lime juice from 1 lime (about 2 tablespoons)
  • Lime zest from 1 lime

Instructions

  1. Pound the chicken breasts to ½-inch thickness for even cooking.
  2. In a small bowl, whisk together olive oil, chili powder, chipotle chili pepper (if using), cumin, smoked paprika, onion powder, garlic powder, salt, pepper, brown sugar, lime juice, and lime zest until well combined.
  3. Rub the chili lime mixture evenly over both sides of the chicken breasts. Let the chicken marinate for at least 15 minutes, or up to an hour in the fridge for deeper flavor.
  4. Heat a grill or skillet over medium-high heat. Cook the chicken for 4-6 minutes per side, or until the internal temperature reaches 165°F (75°C).
  5. Serve the Chili Lime Chicken with your favorite side dishes or in tacos, salads, or wraps. Enjoy!

Notes

  • If you prefer more heat, add extra chipotle chili pepper to the rub.
  • For a smokier flavor, increase the amount of smoked paprika.
  • This chicken is great for meal prep and can be used in salads, tacos, or wraps.
  • For best results, marinate the chicken for an hour to allow the flavors to fully develop.
