- 2 cups oil, for frying
- 30 (6-inch) corn tortillas, torn into strips
- 1/4 cup chopped onion
- 6 large eggs, lightly beaten
- 2 teaspoons salt
- 7 ounces Mexican-style hot tomato sauce or salsa
- 1/2 cup water
- 1/2 cup shredded Monterey Jack cheese
Instructions
- Heat oil in a large skillet over medium heat. Fry tortilla strips in batches until golden and crispy. Drain on paper towels.
- In a separate large skillet, sauté chopped onion over medium heat until soft.
- Add the lightly beaten eggs and cook, stirring gently, until just set.
- Stir in salt, tomato sauce or salsa, and water. Bring to a simmer.
- Add the fried tortilla strips and stir to coat well in the sauce mixture.
- Sprinkle with shredded Monterey Jack cheese and cook for another 2–3 minutes, until the cheese melts.
- Serve warm, optionally topped with fresh cilantro, sour cream, or avocado.
