  1. 1 cup wild rice
  2. 1 lb chicken breast, diced
  3. 2 cups mushrooms, sliced
  4. 1 onion, chopped
  5. 3 cloves garlic, minced
  6. 4 cups chicken broth
  7. 1 cup heavy cream
  8. 2 tablespoons olive oil
  9. 1 teaspoon thyme
  10. Salt and pepper to taste

Instructions

In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened.

Add the diced chicken to the pot and cook until browned.

Stir in the sliced mushrooms and cook for an additional 5 minutes.

Add the wild rice, chicken broth, thyme, salt, and pepper to the pot. Bring the mixture to a boil.

Once boiling, reduce the heat and let it simmer for about 40-45 minutes, or until the rice is tender.

Finally, stir in the heavy cream, heat through, and serve hot.

Notes

  • For a richer flavor, you can sauté the mushrooms in butter instead of olive oil.
  • Leftovers can be stored in the refrigerator for up to 3 days. Reheat on the stove over low heat, adding a little broth if the soup becomes too thick.
  • You can also use chicken thighs for a slightly richer flavor.
