Ingredients

Scale
  • ¼ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon dried oregano
  • 4 medium skinless, boneless chicken breast halves (pounded to ¼ inch thickness)
  • 4 tablespoons butter
  • 4 tablespoons olive oil
  • 1 cup sliced mushrooms
  • ½ cup Marsala wine
  • ¼ cup cooking sherry

Instructions

  • Prepare the Coating: In a shallow dish or bowl, mix the flour, salt, pepper, and oregano.
  • Coat the Chicken: Dredge the chicken breasts in the flour mixture until evenly coated.
  • Sauté the Chicken: Heat the butter and olive oil in a large skillet over medium heat. Add the chicken breasts and cook until lightly browned on one side.
  • Cook with Mushrooms: Flip the chicken, add the mushrooms, and cook for another 2 minutes.
  • Simmer in Sauce: Pour in the Marsala wine and sherry. Cover the skillet and simmer for 10 minutes, turning the chicken once, until cooked through and tender.
  • Serve: Plate the chicken and spoon the sauce over it. Serve hot with your favorite sides.

Notes

  • For an alcohol-free version, substitute Marsala wine and sherry with chicken broth and a splash of balsamic vinegar.
  • Pounding the chicken breasts ensures even cooking and tender meat.
  • Pair with mashed potatoes, fettuccine, or steamed vegetables for a balanced meal
