Ingredients
Scale
Chicken
- 4 boneless skinless chicken breasts (8 ounces each)
- 1 cup all-purpose flour
- 1 teaspoon kosher salt
- ½ teaspoon white pepper
- 8 tablespoons butter
- 4 tablespoons extra virgin olive oil
Vegetables & Sauce
- 1 pound cremini mushrooms, sliced
- 1 medium or ½ large sweet onion, cut into strips
- 1 tablespoon garlic, minced
- ¼ cup dry sherry wine
- 3 tablespoons all-purpose flour
- 1 cup chicken stock
- 1½ cups heavy cream
Topping
- 8 ounces Muenster cheese, sliced
Instructions
Cook the Chicken
- Season chicken breasts with kosher salt and white pepper.
- Dredge chicken in flour, shaking off the excess.
- Heat butter and olive oil in a large skillet over medium heat.
- Brown chicken on both sides until golden and cooked through. Remove and set aside.
Make the Sauce
- In the same skillet, sauté mushrooms, onions, and garlic until soft and fragrant.
- Sprinkle 3 tablespoons of flour over the vegetables and cook, stirring, for 1–2 minutes to eliminate the raw flour taste.
- Gradually pour in the sherry wine and chicken stock while stirring constantly to deglaze the pan and thicken the sauce.
- Add heavy cream and simmer for a few minutes until the sauce thickens slightly.
Assemble and Finish
- Return cooked chicken breasts to the skillet, spoon the creamy sauce over the top.
- Top each chicken breast with sliced Muenster cheese.
- Cover the skillet and cook for about 5 minutes, or until the cheese is fully melted and bubbly.
- Serve warm, spooning extra sauce over each serving.
Notes
- For extra flavor, add a pinch of thyme or a splash of Worcestershire sauce to the sauce base.
- Muenster cheese melts beautifully, but you can substitute with mozzarella or provolone if needed.
- Pairs well with mashed potatoes, buttered noodles, or crusty bread to soak up the sauce.
- This dish reheats well and is perfect for leftovers the next day.
