Vegetables & Sauce

  • 1 pound cremini mushrooms, sliced
  • 1 medium or ½ large sweet onion, cut into strips
  • 1 tablespoon garlic, minced
  • ¼ cup dry sherry wine
  • 3 tablespoons all-purpose flour
  • 1 cup chicken stock
  • 1½ cups heavy cream

Topping

  • 8 ounces Muenster cheese, sliced

Instructions

Cook the Chicken

  1. Season chicken breasts with kosher salt and white pepper.
  2. Dredge chicken in flour, shaking off the excess.
  3. Heat butter and olive oil in a large skillet over medium heat.
  4. Brown chicken on both sides until golden and cooked through. Remove and set aside.

Make the Sauce

  1. In the same skillet, sauté mushrooms, onions, and garlic until soft and fragrant.
  2. Sprinkle 3 tablespoons of flour over the vegetables and cook, stirring, for 1–2 minutes to eliminate the raw flour taste.
  3. Gradually pour in the sherry wine and chicken stock while stirring constantly to deglaze the pan and thicken the sauce.
  4. Add heavy cream and simmer for a few minutes until the sauce thickens slightly.

Assemble and Finish

  1. Return cooked chicken breasts to the skillet, spoon the creamy sauce over the top.
  2. Top each chicken breast with sliced Muenster cheese.
  3. Cover the skillet and cook for about 5 minutes, or until the cheese is fully melted and bubbly.
