Description

A comforting and flavorful casserole combining juicy chicken, tangy bruschetta, and melty cheese. Perfect for a family dinner, this dish is a great way to enjoy the classic bruschetta flavors in casserole form.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Parmesan cheese
  • 1 cup fresh basil leaves, chopped
  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper. In a skillet, cook the chicken until browned on both sides. Remove from heat and let it cool slightly before shredding.
  3. In a bowl, combine shredded chicken, mozzarella, Parmesan, basil, cherry tomatoes, garlic, balsamic vinegar, olive oil, salt, and pepper.
  4. Transfer the bruschetta mixture to a baking dish and spread it out evenly.
  5. Bake the casserole in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
  6. Garnish with additional fresh basil leaves and serve hot. Enjoy!
