500g (1 lb) chicken breasts, cubed

1 cup low-fat plain Greek yogurt

1 cup milk of choice

¾ cup grated cheddar cheese
Instructions

Prep the Ingredients: Preheat oven to 375ºF (190ºC). Cube the chicken and potatoes, dice the bell pepper, and chop the broccoli.

Assemble the Casserole: In a large casserole dish, combine the chicken, potatoes, bell pepper, and broccoli. Add the Greek yogurt, pesto, milk, salt, and pepper. Stir everything together until well combined.

Bake the Casserole: Cover loosely with foil and bake for 40-50 minutes, until the potatoes are tender and the chicken is cooked through.

Remove foil and sprinkle cheddar cheese evenly over the top. Bake uncovered for another 5-6 minutes, until the cheese is melted and bubbly.
