This Chicken Broccoli Potato Casserole is a hearty and family-friendly meal, made with tender chicken, baby potatoes, and broccoli in a creamy Greek yogurt pesto sauce. It’s an easy, comforting, and healthy dinner that everyone will love!

  1. 500g (1 lb) chicken breasts, cubed

  2. 1 red bell pepper, chopped

  3. 350g (12 oz) baby potatoes, cubed

  4. 250g (9 oz) broccoli florets, chopped

  5. ¼ cup pesto

  6. 4 garlic cloves, minced

  7. ½ tsp black pepper

  8. ½ tsp salt

  9. 1 cup low-fat plain Greek yogurt

  10. 1 cup milk of choice

  11. ¾ cup grated cheddar cheese

Instructions

  • Prep the Ingredients: Preheat oven to 375ºF (190ºC). Cube the chicken and potatoes, dice the bell pepper, and chop the broccoli.

  • Assemble the Casserole: In a large casserole dish, combine the chicken, potatoes, bell pepper, and broccoli. Add the Greek yogurt, pesto, milk, salt, and pepper. Stir everything together until well combined.

  • Bake the Casserole: Cover loosely with foil and bake for 40-50 minutes, until the potatoes are tender and the chicken is cooked through.

  • Remove foil and sprinkle cheddar cheese evenly over the top. Bake uncovered for another 5-6 minutes, until the cheese is melted and bubbly.

 

  • Serve & Enjoy: Let the casserole sit for 5 minutes before serving. Enjoy while hot!

Notes

  • For a dairy-free version, substitute the Greek yogurt and cheddar cheese with non-dairy alternatives.

 

  • Add other vegetables such as spinach or peas for more variety.
