This Chicken Broccoli Potato Casserole is a hearty and family-friendly meal, made with tender chicken, baby potatoes, and broccoli in a creamy Greek yogurt pesto sauce. It’s an easy, comforting, and healthy dinner that everyone will love!
500g (1 lb) chicken breasts, cubed
1 red bell pepper, chopped
350g (12 oz) baby potatoes, cubed
250g (9 oz) broccoli florets, chopped
¼ cup pesto
4 garlic cloves, minced
½ tsp black pepper
½ tsp salt
1 cup low-fat plain Greek yogurt
1 cup milk of choice
¾ cup grated cheddar cheese
Prep the Ingredients: Preheat oven to 375ºF (190ºC). Cube the chicken and potatoes, dice the bell pepper, and chop the broccoli.
Assemble the Casserole: In a large casserole dish, combine the chicken, potatoes, bell pepper, and broccoli. Add the Greek yogurt, pesto, milk, salt, and pepper. Stir everything together until well combined.
