For the Pasta
- 8 oz penne pasta
For the Chicken & Sauce
- 2 chicken breasts, cut into bite-sized pieces
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 5 oz Boursin cheese (Garlic & Herb)
- 1/4 cup Parmesan cheese, grated
- Salt and pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta: Boil penne pasta according to package directions. Drain and set aside.
- Cook the chicken: In a large skillet, heat olive oil over medium heat. Add chicken, season with salt and pepper, and cook until golden and fully cooked. Remove and set aside.
- Sauté the mushrooms and garlic: In the same skillet, sauté garlic and mushrooms until softened and fragrant.
- Create the sauce: Pour in chicken broth and heavy cream. Stir and bring to a simmer.
- Add cheese: Stir in Boursin and Parmesan cheese until melted and the sauce is smooth and creamy.
- Combine everything: Return cooked chicken and pasta to the skillet. Toss to coat evenly in the creamy sauce.
- Finish and serve: Sprinkle with chopped parsley and serve hot.

- Use rotisserie chicken to save time.
