For the Pasta

  • 8 oz penne pasta

For the Chicken & Sauce

  • 2 chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 5 oz Boursin cheese (Garlic & Herb)
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta: Boil penne pasta according to package directions. Drain and set aside.
  2. Cook the chicken: In a large skillet, heat olive oil over medium heat. Add chicken, season with salt and pepper, and cook until golden and fully cooked. Remove and set aside.
  3. Sauté the mushrooms and garlic: In the same skillet, sauté garlic and mushrooms until softened and fragrant.
  4. Create the sauce: Pour in chicken broth and heavy cream. Stir and bring to a simmer.
  5. Add cheese: Stir in Boursin and Parmesan cheese until melted and the sauce is smooth and creamy.
  6. Combine everything: Return cooked chicken and pasta to the skillet. Toss to coat evenly in the creamy sauce.
  7. Finish and serve: Sprinkle with chopped parsley and serve hot.

  • Use rotisserie chicken to save time.
