- 150g cooked chicken, shredded
- 300g sweet corn (1 can)
- 960ml chicken broth (4 cups)
- 150g onion, diced
- 6g garlic, minced (2 cloves)
- 130g carrots, diced (1 cup)
- 130g celery, diced (1 cup)
- 6g salt (1 teaspoon)
- 1.5g pepper (1/2 teaspoon)
- 15g soy sauce (optional, 1 tablespoon)
- 20g green onions, sliced (for garnish)
Instructions
- In a large pot, heat a little oil over medium heat. Add the onion, garlic, carrots, and celery, and sauté until the vegetables are soft.
- Stir in the cooked chicken and sweet corn.
- Pour in the chicken broth and add salt, pepper, and soy sauce if using.
- Bring to a boil, then reduce heat and simmer for about 20 minutes.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with sliced green onions.
