This Chicken and Mushroom Dinner is a quick and easy high-protein meal that’s both healthy and delicious. With tender chicken breast, flavorful mushrooms, and aromatic herbs, this dish comes together in just 17 minutes, making it perfect for a weeknight dinner or meal prep.   1. 10 oz (280g) chicken breast, chopped into bite-sized pieces
  2. 5 oz (150g) mushrooms, chopped
  3. 2 garlic cloves, minced
  4. 1 scallion, thinly chopped
  5. 2 Tbsp parsley, finely chopped
  6. 1/2 tsp dried oregano
  7. 1 tsp crushed red pepper (optional)
  8. 1 Tbsp olive oil
  9. Salt and black pepper, to taste

Instructions

  • Prepare Ingredients: Chop the chicken into bite-sized pieces. Wash and chop the mushrooms, scallion, and parsley.
  • Cook the Chicken: In a pan over medium-high heat, add olive oil and the chopped chicken. Season with salt, crushed red pepper (if using), scallion, oregano, and black pepper. Sauté for 4–5 minutes, stirring occasionally.
  • Add the Mushrooms: Stir in the mushrooms and cook for another 2–3 minutes.
  • Finish with Garlic: Add the minced garlic, stir 2–3 more times, then turn off the heat.

 

  • Serve: Sprinkle freshly chopped parsley on top and serve immediately!

Notes

  • For extra flavor, consider adding a squeeze of fresh lemon juice before serving.
  • This dish pairs well with a side of quinoa, rice, or steamed vegetables.

 

  • If you prefer more spice, feel free to increase the crushed red pepper.
