- 5 oz (150g) mushrooms, chopped
- 2 garlic cloves, minced
- 1 scallion, thinly chopped
- 2 Tbsp parsley, finely chopped
- 1/2 tsp dried oregano
- 1 tsp crushed red pepper (optional)
- 1 Tbsp olive oil
- Salt and black pepper, to taste
Instructions
- Prepare Ingredients: Chop the chicken into bite-sized pieces. Wash and chop the mushrooms, scallion, and parsley.
- Cook the Chicken: In a pan over medium-high heat, add olive oil and the chopped chicken. Season with salt, crushed red pepper (if using), scallion, oregano, and black pepper. Sauté for 4–5 minutes, stirring occasionally.
- Add the Mushrooms: Stir in the mushrooms and cook for another 2–3 minutes.
- Finish with Garlic: Add the minced garlic, stir 2–3 more times, then turn off the heat.
- Serve: Sprinkle freshly chopped parsley on top and serve immediately!
