These classic Oatmeal Raisin Cookies are soft, chewy, and packed with hearty oats and sweet raisins

Ingredients

Scale
  1. 1 cup unsalted butter, softened
  2. 1 cup packed brown sugar
  3. 1/2 cup granulated sugar
  4. 2 large eggs
  5. 1 tsp vanilla extract
  6. 1 1/2 cups all-purpose flour
  7. 1 tsp baking soda
  8. 1 tsp ground cinnamon
  9. 1/2 tsp salt
  10. 3 cups old-fashioned oats
  11. 1 cup raisins

Instructions

  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper and set aside.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the eggs, one at a time, until well combined. Stir in the vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the old-fashioned oats and raisins until evenly distributed throughout the dough.
  • Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers are set.
  • Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Make sure to not over-bake the cookies to maintain their soft texture.
  • For a chewy texture, you can refrigerate the dough for 30 minutes before baking.
