- 3/4 cup unsalted butter, softened
- 3 large eggs
- 1 cup whole milk
- 1 tablespoon baking powder

- 1/2 teaspoon almond extract
- 1 cup fresh or frozen cherries, pitted and chopped
For the cherry cream cheese frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup cherry preserves
- 1 teaspoon vanilla extract
Instructions
- Prep the Oven & Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- Cream Butter & Sugar: In a large bowl, beat the softened butter and granulated sugar together until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla and almond extracts.
- Combine Dry & Wet: In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients alternately with the milk to the butter mixture, mixing gently.
- Fold in Cherries: Carefully fold in the chopped cherries.
- Bake the Cake: Pour the batter into the prepared pan and spread evenly. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
- Make the Frosting: Beat the cream cheese and butter together until smooth and soft. Gradually add powdered sugar, mixing well. Stir in cherry preserves and vanilla extract until combined.
- Frost & Serve: Spread the cherry cream cheese frosting evenly over the cooled cake. Chill in the refrigerator until ready to serve.
Notes
- For extra cherry flavor, gently fold in some more cherry preserves into the batter before baking.
- Fresh cherries can be substituted with frozen ones; just be sure to thaw and drain excess liquid.
