- 1½ cups self-raising (self-rising) flour
- 2 tablespoons tomato paste
- ¼ brown or yellow onion, finely diced
- ¼ red capsicum (bell pepper), finely diced
- 2 white mushrooms, finely diced
- 4 Kalamata olives, finely diced
- 2 tablespoons tinned pineapple pieces, finely diced
- 1 cup shredded mozzarella or cheddar cheese
Instructions
- Preheat oven to 375°F (190°C) and line a baking tray with parchment paper.
- In a mixing bowl, combine Greek yoghurt and self-raising flour to form a soft, pliable dough.
- Transfer dough to a floured surface and roll into a rectangle about ¼ inch thick.
- Spread tomato paste evenly over the dough, reaching the edges.
- Scatter diced onion, capsicum, mushrooms, olives, pineapple, and cheese evenly on top.
- Carefully roll the dough into a log, starting from one long edge. Slice into even rounds.
- Place rolls cut-side up on the prepared tray, spacing them slightly apart.
- Bake for 18–22 minutes, or until golden brown and cooked through.
- Cool slightly before serving. Best enjoyed warm!
