  • 1 cup Greek yoghurt
  • 1½ cups self-raising (self-rising) flour
  • 2 tablespoons tomato paste
  • ¼ brown or yellow onion, finely diced
  • ¼ red capsicum (bell pepper), finely diced
  • 2 white mushrooms, finely diced
  • 4 Kalamata olives, finely diced
  • 2 tablespoons tinned pineapple pieces, finely diced
  • 1 cup shredded mozzarella or cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine Greek yoghurt and self-raising flour to form a soft, pliable dough.
  3. Transfer dough to a floured surface and roll into a rectangle about ¼ inch thick.
  4. Spread tomato paste evenly over the dough, reaching the edges.
  5. Scatter diced onion, capsicum, mushrooms, olives, pineapple, and cheese evenly on top.
  6. Carefully roll the dough into a log, starting from one long edge. Slice into even rounds.
  7. Place rolls cut-side up on the prepared tray, spacing them slightly apart.
  8. Bake for 18–22 minutes, or until golden brown and cooked through.
  9. Cool slightly before serving. Best enjoyed warm!

  • You can use plain flour with 2 tsp baking powder as a substitute for self-raising flour.
