  • 1 (10 oz) package frozen chopped spinach, thawed and thoroughly drained/patted dry
  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 1/2 red bell pepper, diced
  • 2 garlic cloves, minced
  • 2 tablespoons prepared pesto
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup mayonnaise
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup freshly grated sharp cheddar cheese
  • 1/2 cup freshly grated mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice the French bread in half lengthwise and hollow out the center, leaving about a 1/2-inch shell. Set aside the removed bread for another use.
  3. In a skillet, heat olive oil over medium heat. Sauté onion and bell pepper until soft, about 5 minutes. Add garlic and cook for 30 seconds more.
  4. In a large mixing bowl, combine sautéed vegetables, spinach, pesto, Worcestershire sauce, paprika, salt, and pepper.
  5. Stir in mayonnaise, cream cheese, and sour cream until smooth and well combined.
  6. Fold in Parmesan, cheddar, and mozzarella cheese.
  7. Spoon the spinach dip mixture into the hollowed-out bread halves and place them on a baking sheet.
  8. Bake for 20–25 minutes, or until hot and bubbly and the cheese is melted and lightly golden.
  9. Slice and serve warm.

Notes

  • Use fresh spinach if preferred—just sauté it and squeeze out all moisture.
  • The hollowed-out bread can be cubed and baked into croutons.
  • To make ahead, prepare the filling and stuff the bread up to 24 hours in advance. Bake just before serving.
  • Great with a side of marinara or extra pesto for dipping.
  • You can substitute Greek yogurt for the sour cream for a tangier flavor.
