- 1 (10 oz) package frozen chopped spinach, thawed and thoroughly drained/patted dry
- 1 tablespoon olive oil
- 1/2 onion, diced
- 1/2 red bell pepper, diced
- 2 garlic cloves, minced
- 2 tablespoons prepared pesto
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup mayonnaise
- 4 oz cream cheese, softened
- 1/2 cup sour cream
- 1 cup freshly grated Parmesan cheese
- 1/2 cup freshly grated sharp cheddar cheese
- 1/2 cup freshly grated mozzarella cheese
Instructions
- Preheat oven to 375°F (190°C).
- Slice the French bread in half lengthwise and hollow out the center, leaving about a 1/2-inch shell. Set aside the removed bread for another use.
- In a skillet, heat olive oil over medium heat. Sauté onion and bell pepper until soft, about 5 minutes. Add garlic and cook for 30 seconds more.
- In a large mixing bowl, combine sautéed vegetables, spinach, pesto, Worcestershire sauce, paprika, salt, and pepper.
- Stir in mayonnaise, cream cheese, and sour cream until smooth and well combined.
- Fold in Parmesan, cheddar, and mozzarella cheese.
- Spoon the spinach dip mixture into the hollowed-out bread halves and place them on a baking sheet.
- Bake for 20–25 minutes, or until hot and bubbly and the cheese is melted and lightly golden.
- Slice and serve warm.
Notes
- Use fresh spinach if preferred—just sauté it and squeeze out all moisture.
- The hollowed-out bread can be cubed and baked into croutons.
- To make ahead, prepare the filling and stuff the bread up to 24 hours in advance. Bake just before serving.
- Great with a side of marinara or extra pesto for dipping.
- You can substitute Greek yogurt for the sour cream for a tangier flavor.
