Description

These Cheesy Ranch Oven Roasted Potatoes are the perfect side dish, packed with crispy, golden potatoes tossed in ranch seasoning and topped with melted cheddar and Parmesan cheese. Perfect for weeknight dinners or as a crowd-pleasing side at your next gathering


Ingredients

  1. 4 large russet potatoes, scrubbed and diced

  2. 1/4 cup olive oil

  3. 1 packet ranch seasoning mix

  4. 1 cup shredded cheddar cheese

  5. 1/4 cup grated Parmesan cheese

  6. 2 tablespoons chopped fresh parsley (optional)

  7. Salt and pepper to taste


Instructions

  • Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • Prepare Potatoes: In a large bowl, toss the diced potatoes with olive oil, ranch seasoning mix, salt, and pepper until evenly coated.

  • Bake: Spread the potatoes evenly on the prepared baking sheet. Roast for 25-30 minutes, or until golden and crispy, stirring halfway through.

  • Add Cheese: Sprinkle shredded cheddar cheese and grated Parmesan cheese over the potatoes. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

 

  • Serve: Transfer the cheesy ranch potatoes to a serving dish and sprinkle with chopped fresh parsley if desired.


Notes

  • You can customize this recipe by adding bacon bits or green onions on top for extra flavor!

 

  • If you don’t have ranch seasoning, you can make your own with a mix of dried dill, garlic powder, onion powder, parsley, and a pinch of salt.
