Description

Crispy, cheesy, and packed with bold taco flavors, these Cheesy Pocket Tacos are the ultimate easy dinner or party food! Filled with seasoned beef, melty cheese, and fresh toppings, they’re perfect for taco night


Ingredients

    1. 1 lb ground beef (or ground turkey)
    2. 1 packet taco seasoning
    3. 1/2 cup water
    4. 1 cup shredded cheddar cheese (or Mexican blend)
    5. 1/2 cup shredded Monterey Jack cheese
    6. 1/4 cup chopped red onion
    7. 1/4 cup chopped cilantro
    8. 1/4 cup sour cream (or Greek yogurt)
    9. 12 small flour tortillas (street taco size)

Toppings (optional but recommended):

    1. Diced tomatoes
    2. Shredded lettuce
    3. Salsa
    4. Guacamole
    5. Jalapeños

Instructions

  • Cook the Taco Meat:
    In a large skillet over medium-high heat, brown the ground beef (or turkey), breaking it up with a spoon. Drain excess grease.
    Stir in taco seasoning and water. Simmer for 5-7 minutes until the sauce thickens.

  • Prepare the Cheese Mixture:
    In a bowl, mix cheddar and Monterey Jack cheese.

  • Assemble the Pockets:
    Warm tortillas to make them pliable.
    Spoon taco meat onto one half of each tortilla.
    Sprinkle cheese, red onion, and cilantro over the meat.
    Fold the tortilla in half to create a pocket.

  • Toast the Pockets (Optional but Recommended):
    Heat a skillet or panini press over medium heat.
    Toast each pocket for 1-2 minutes per side until golden brown and cheese is melted.

 

  • Load & Serve:
    Open the pockets and add toppings like diced tomatoes, lettuce, salsa, guacamole, and jalapeños.
    Serve with sour cream or Greek yogurt.


Notes

  • For a healthier version, you can substitute ground turkey for ground beef and use Greek yogurt in place of sour cream.

 

  • Add extra spices or hot sauce to the taco meat for a spicier kick!
