Description

  2. 5 medium potatoes, peeled and diced

  7. 1 cup shredded cheddar cheese

  8. 2 tbsp butter

  9. Salt and pepper to taste

  10. Fresh chives for garnish


Instructions

  • Cook the Ground Beef:
    Melt butter in a large pot over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks.

  • Sauté the Onion and Garlic:
    Stir in diced onion and garlic, sautéing for 2-3 minutes until softened and fragrant.

  • Add Potatoes and Beef Broth:
    Add the diced potatoes and beef broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the potatoes are tender.

  • Make it Creamy:
    Stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the soup becomes creamy.

 

  • Season and Garnish:
    Season with salt and pepper to taste. Garnish with fresh chives before serving.


Notes

  • You can substitute ground turkey or chicken for a leaner version of the soup.
