- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, finely chopped

- 3 tablespoons butter
- 3 cloves garlic, minced

- 1 teaspoon dried parsley
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- Fresh parsley, for garnish
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- Cut a pocket into each chicken breast without cutting all the way through.
- In a bowl, mix together the mushrooms, cream cheese, mozzarella cheese, garlic, thyme, parsley, salt, and pepper.
- Stuff each chicken breast with the mushroom mixture.
- In a skillet, melt the butter over medium heat.

- Transfer the seared chicken breasts to the prepared baking sheet.
- Sprinkle grated Parmesan cheese over the top of each chicken breast.
- Bake in the preheated oven for 20-25 minutes until the chicken is cooked through and the cheese is melted.
