Ingredients

  • 1 store-bought or homemade pizza dough
  • 8 ounces fresh mission figs, quartered/sliced and stems removed
  • 8 ounces brie, rind removed
  • 2 cups shredded Italian cheese blend
  • ½ cup shredded parmesan cheese
  • ⅓ cup fig spread, more as desired
  • 1 to 2 tablespoons extra virgin olive oil
  • Fresh thyme leaves
  • Fresh ground black pepper

Instructions

  1. Preheat the oven to 475°F (245°C) and line a baking sheet with parchment paper.
  2. Roll out the pizza dough on the prepared baking sheet into your desired shape.
  3. Brush the dough lightly with olive oil.
  4. Spread the fig spread evenly across the dough, leaving a small border around the edges.
  5. Layer the quartered figs and brie slices on top of the fig spread.
  6. Sprinkle the shredded Italian cheese blend and parmesan cheese over the figs and brie.
  7. Add a few fresh thyme leaves and season with freshly ground black pepper.
  8. Bake in the oven for 12-15 minutes, or until the cheese is melted and bubbly and the edges of the dough are golden brown.
  9. Remove from the oven and drizzle with additional olive oil if desired.
  10. Slice, garnish with extra fresh thyme, and serve hot! Enjoy your cheesy fig brie flatbread!

  • If you prefer a sweeter flavor, feel free to add more fig spread to the base.
