- 8 ounces fresh mission figs, quartered/sliced and stems removed
- 8 ounces brie, rind removed
- 2 cups shredded Italian cheese blend
- ½ cup shredded parmesan cheese
- ⅓ cup fig spread, more as desired
- 1 to 2 tablespoons extra virgin olive oil
- Fresh thyme leaves
- Fresh ground black pepper
Instructions
- Preheat the oven to 475°F (245°C) and line a baking sheet with parchment paper.
- Roll out the pizza dough on the prepared baking sheet into your desired shape.
- Brush the dough lightly with olive oil.
- Spread the fig spread evenly across the dough, leaving a small border around the edges.
- Layer the quartered figs and brie slices on top of the fig spread.
- Sprinkle the shredded Italian cheese blend and parmesan cheese over the figs and brie.
- Add a few fresh thyme leaves and season with freshly ground black pepper.
- Bake in the oven for 12-15 minutes, or until the cheese is melted and bubbly and the edges of the dough are golden brown.
- Remove from the oven and drizzle with additional olive oil if desired.
