This Cheesy Enchilada Chili is a comforting, flavorful dish that combines savory taco-seasoned beef, creamy salsa con queso, and a variety of tasty ingredients like beans, corn, and fire-roasted chilis.   1. 1 pound ground beef
  2. 2 tbsp taco seasoning
  3. 1/4 cup water
  4. 1 jar Tostitos Salsa Con Queso
  5. 1 can potato soup
  6. 1 1/4 cups sour cream
  7. 1 can fire roasted diced green chilis
  8. 1 1/4 cups beef broth
  9. 1/2 cup chicken broth
  10. 1 cup frozen corn
  11. 1 cup pinto beans or black beans

Instructions

  • Brown the ground beef in a skillet and drain any excess fat if necessary.
  • Add taco seasoning and water to the beef, cooking until the water is absorbed.
  • Transfer the taco meat to a Dutch oven or large pot.
  • Add the jar of salsa, can of potato soup, sour cream, and both broths. Stir well until the sour cream is fully melted.
  • Add the diced green chilis, corn, and pinto or black beans. Stir to combine.
  • Bring the mixture to a boil and then reduce heat, allowing it to simmer while stirring often to prevent sticking.
  • Serve immediately or keep simmering until ready to eat.
  • Enjoy with tortilla chips or Fritos. Optional: Add jalapeños to taste.

  • For extra flavor, add jalapeños to the chili or garnish with fresh cilantro.
  • If you prefer a thicker chili, simmer for a longer period to reduce the liquid.
