Description

  1. 1 pound ground beef
  2. 2 tbsp taco seasoning
  3. 1/4 cup water
  4. 1 jar Tostitos Salsa Con Queso
  5. 1 can potato soup
  6. 1 1/4 cups sour cream
  7. 1 can fire-roasted diced green chilis
  8. 1 1/4 cups beef broth
  9. 1/2 cup chicken broth
  10. 1 cup frozen corn
  11. 1 cup pinto beans or black beans
  12. Tortilla chips or Fritos (for serving)

Instructions

  • Brown the Ground Beef:
    Brown the ground beef in a skillet over medium heat. Drain the excess fat if needed.

  • Add Seasoning:
    Add taco seasoning and water to the beef. Cook until the water is absorbed.

  • Combine Ingredients:
    Transfer the cooked taco meat to a Dutch oven or large pot. Add the jar of salsa con queso, can of potato soup, sour cream, and both broths (beef and chicken). Stir well until the sour cream is fully melted into the mixture.

  • Add Veggies and Beans:
    Stir in the diced green chilis, frozen corn, and pinto beans (or black beans).

  • Heat Through:
    Bring the mixture to a boil, then reduce heat to a simmer. Let it cook until heated through. Stir occasionally to prevent sticking.

  • Serve:
    Serve hot with tortilla chips or Fritos for a delicious crunch.

  • You can use either pinto beans or black beans depending on your preference.
