- 1 green bell pepper, diced
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp ground cumin
- ½ tsp dried oregano

- 10 oz yellow potatoes, cut into ½” cubes**
- Kosher salt, to taste
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup shredded Mexican-blend cheese
- Chopped cilantro, optional for garnish
*Use fresh chorizo for the best flavor; remove casing if needed.
**Yukon gold or yellow potatoes work great here.
Instructions
- In a large skillet, heat olive oil over medium heat. Add diced potatoes and cook until golden and fork-tender, about 8–10 minutes. Remove and set aside.
- In the same skillet, cook chorizo until browned and fully cooked, breaking it up as it cooks.
- Add onion and bell pepper; sauté until softened, about 3–5 minutes.
- Stir in smoked paprika, garlic powder, cumin, oregano, and salt.
- Return potatoes to the skillet, then add black beans. Stir to combine and heat through.
- Sprinkle cheese over the top, cover, and let sit for 2–3 minutes until melted.
- Garnish with chopped cilantro if desired. Serve hot.
