  • 1 lb fresh chorizo*
  • ½ large yellow onion, finely diced
  • 1 green bell pepper, diced
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp ground cumin
  • ½ tsp dried oregano
  • 1 tbsp olive oil
  • 10 oz yellow potatoes, cut into ½” cubes**
  • Kosher salt, to taste
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup shredded Mexican-blend cheese
  • Chopped cilantro, optional for garnish

*Use fresh chorizo for the best flavor; remove casing if needed.
**Yukon gold or yellow potatoes work great here.


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced potatoes and cook until golden and fork-tender, about 8–10 minutes. Remove and set aside.
  2. In the same skillet, cook chorizo until browned and fully cooked, breaking it up as it cooks.
  3. Add onion and bell pepper; sauté until softened, about 3–5 minutes.
  4. Stir in smoked paprika, garlic powder, cumin, oregano, and salt.
  5. Return potatoes to the skillet, then add black beans. Stir to combine and heat through.
  6. Sprinkle cheese over the top, cover, and let sit for 2–3 minutes until melted.
  7. Garnish with chopped cilantro if desired. Serve hot.

  • For a milder flavor, use mild chorizo or substitute with spicy sausage.
  • Feel free to swap black beans with pinto beans or kidney beans.
