Description

Ingredients

  • Cooked chicken breast (rotisserie chicken works well)
  • Wide egg noodles
  • Sour cream
  • Cream of chicken soup (low-fat or heart-healthy version recommended)
  • Shredded cheddar cheese
  • Mozzarella cheese
  • Crushed buttery crackers
  • Butter (melted or dotted on top)

Instructions

  1. Boil the egg noodles until just tender (al dente) and drain. If you’re not using pre-cooked chicken, bake or boil and shred the chicken ahead of time.
  2. In a bowl, mix the cream of chicken soup, sour cream, shredded cheddar cheese, and seasonings. Stir until smooth and creamy.
  3. Combine the noodles, chicken, veggies, and cheese sauce in a large mixing bowl. Pour the mixture into a greased 9×13-inch baking dish.
  4. Top with extra cheese and crushed crackers.
  5. Bake at 375°F (190°C) for 25–30 minutes, or until bubbly and golden on top.
