Description

This Cheesy Burrito Pie is a hearty, flavorful dish that combines layers of seasoned beef, refried beans, salsa, and plenty of melted cheese. It’s the perfect comfort food for taco night or any time you want a quick and satisfying meal.


Ingredients

  1. 2 pounds ground beef (85/15)
  2. 1 yellow onion, diced
  3. 3 cloves garlic, minced
  4. 14 ounces canned diced tomatoes
  5. 8 ounces canned diced green chiles
  6. ½ cup black olives, sliced
  7. 4 cups refried beans (or 2 cans)
  8. 16 ounces salsa
  9. 12 flour tortillas (8-inch)
  10. 2 ½ cups cheddar cheese, shredded

Instructions

  • Preheat oven to 350°F (175°C). Spray an 8×8-inch baking dish with baking spray.
  • In a large skillet, cook the ground beef and diced onions over high heat. Break the beef apart while cooking until browned.
  • Add minced garlic to the skillet and cook for 30 seconds. Remove beef mixture from the pan and set aside.
  • In the same pan, reduce heat to medium and add the diced tomatoes, green chiles, black olives, refried beans, and salsa. Stir well and heat through.
  • Layer the burrito pie in the prepared baking dish: Start with 3 tortillas, then top with ⅓ of the refried beans, ⅓ of the meat mixture, and ½ cup of shredded cheddar cheese.
  • Repeat the layering process twice more. End with a final layer of tortillas and top with 1 cup of shredded cheddar cheese.
  • Bake for 30 minutes, uncovered, until the cheese is melted and bubbly.
  • Serve hot with sour cream, salsa, cilantro, or guacamole.

Notes

  • For a spicier version, add a bit of jalapeño or your favorite hot sauce.
  • This recipe can be made ahead of time and stored in the fridge for 1-2 days before baking.
