- 2 cups cooked white rice
- 2 cups fresh broccoli florets, steamed
- 2 cups shredded cheddar cheese, divided
- 1 cup cooked chicken breast, shredded (optional)
- 1 can (10.5 oz) condensed cream of chicken soup
- 1/2 cup milk
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper, to taste
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, combine the cooked rice, steamed broccoli, 1 1/2 cups shredded cheddar cheese, cooked chicken (if using), cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
- Bake for 25-30 minutes, or until the cheese is melted and bubbling.
- Let it cool slightly before serving.
Notes
- If you want a healthier version, you can substitute the cream of chicken soup with a homemade version or a healthier alternative.
- You can also add other veggies like carrots or peas for more flavor and nutrition.
