Description

A creamy, cheesy, and comforting casserole made with broccoli, rice, cheddar cheese, and a hint of garlic and onion. This dish can be served as a side or a main, and is perfect for weeknight dinners or family gatherings

  1. 2 cups cooked white rice
  2. 2 cups fresh broccoli florets, steamed
  3. 2 cups shredded cheddar cheese, divided
  4. 1 cup cooked chicken breast, shredded (optional)
  5. 1 can (10.5 oz) condensed cream of chicken soup
  6. 1/2 cup milk
  7. 1/4 teaspoon garlic powder
  8. 1/4 teaspoon onion powder
  9. Salt and pepper, to taste

Instructions

  • Preheat your oven to 350°F (175°C) and grease a baking dish.
  • In a large bowl, combine the cooked rice, steamed broccoli, 1 1/2 cups shredded cheddar cheese, cooked chicken (if using), cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
  • Transfer the mixture to the prepared baking dish and spread evenly.
  • Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  • Bake for 25-30 minutes, or until the cheese is melted and bubbling.
  • Let it cool slightly before serving.

Notes

  • If you want a healthier version, you can substitute the cream of chicken soup with a homemade version or a healthier alternative.
  • You can also add other veggies like carrots or peas for more flavor and nutrition.
