Cheese Topping
- 1 package (5.2 oz) Boursin cheese (Garlic & Fine Herbs recommended)
- 1 cup shredded cheddar cheese
- Fresh parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Toss baby potatoes with olive oil, salt, and pepper. Spread them in a large oven-safe skillet or baking dish and roast for 25–30 minutes until tender and golden brown.
- While potatoes roast, cook ground beef in a pan over medium heat until browned. Drain excess fat if needed.
- Add chopped onion and minced garlic to the beef. Sauté until softened and fragrant, about 3–4 minutes.
- Stir in crushed tomatoes, tomato paste, Worcestershire sauce, brown sugar, smoked paprika, and season with salt and pepper. Simmer for 5–7 minutes until thickened.
- Remove roasted potatoes from the oven. Spoon the sloppy joe beef mixture evenly over the top.
- Dot with chunks of Boursin cheese and sprinkle shredded cheddar on top.
- Return the skillet to the oven and bake for another 10 minutes, until the cheese is fully melted and bubbling.
- Garnish with freshly chopped parsley and serve hot. Enjoy!
