Description

  • 2 cups rotini pasta (or any short pasta)
  • 1 small onion, diced

  • 1 packet taco seasoning

  • 1 cup tomato sauce
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tbsp fresh cilantro, chopped (optional for garnish)

Instructions

  1. Cook the rotini according to the package instructions. Drain and set aside.
  2. In a large skillet over medium heat, cook ground beef until browned, breaking it apart as it cooks. Add diced onion and garlic, cooking for another 2-3 minutes until softened.
  3. Stir in the taco seasoning, beef broth, and tomato sauce. Bring the mixture to a simmer and let it cook for 5-7 minutes, allowing the flavors to meld.
  4. Add the cooked pasta to the skillet, stirring to combine everything. Sprinkle shredded cheddar and mozzarella cheese on top.
  5. Cover the skillet and cook on low for 3-5 minutes, until the cheese is melted and bubbly.
  6. Garnish with fresh cilantro, if desired, and serve hot!

Notes

  • Feel free to use any short pasta you prefer such as penne, rotini, or farfalle.
