- 1 lb ground beef
- 2 cups rotini pasta (or any short pasta)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup beef broth
- 1 cup tomato sauce
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 2 tbsp fresh cilantro, chopped (optional for garnish)
Instructions
- Cook the rotini according to the package instructions. Drain and set aside.
- In a large skillet over medium heat, cook ground beef until browned, breaking it apart as it cooks. Add diced onion and garlic, cooking for another 2-3 minutes until softened.
- Stir in the taco seasoning, beef broth, and tomato sauce. Bring the mixture to a simmer and let it cook for 5-7 minutes, allowing the flavors to meld.
- Add the cooked pasta to the skillet, stirring to combine everything. Sprinkle shredded cheddar and mozzarella cheese on top.
- Cover the skillet and cook on low for 3-5 minutes, until the cheese is melted and bubbly.
- Garnish with fresh cilantro, if desired, and serve hot!
Notes
- Feel free to use any short pasta you prefer such as penne, rotini, or farfalle.
- If you prefer a spicier dish, add some jalapeños or hot sauce along with the taco seasoning.
- For a richer flavor, you can use ground turkey or chicken instead of beef.
