  1. 1 lb ground beef
  2. 2 cups rotini pasta (or any short pasta)
  3. 1 small onion, diced
  4. 2 cloves garlic, minced
  5. 1 packet taco seasoning
  6. 1 cup beef broth
  7. 1 cup tomato sauce
  8. 1 cup shredded cheddar cheese
  9. ½ cup shredded mozzarella cheese
  10. 2 tbsp fresh cilantro, chopped (optional for garnish)

Instructions

  • Cook the Pasta:
    Cook the rotini according to the package instructions. Drain and set aside.

  • Cook the Beef:
    In a large skillet over medium heat, cook ground beef until browned, breaking it apart as it cooks. Add diced onion and garlic, cooking for another 2-3 minutes until softened.

  • Season the Beef:
    Stir in the taco seasoning, beef broth, and tomato sauce. Bring the mixture to a simmer and let it cook for 5-7 minutes, allowing the flavors to meld.

  • Combine with Pasta:
    Add the cooked pasta to the skillet, stirring to combine everything. Sprinkle shredded cheddar and mozzarella cheese on top.

  • Melt the Cheese:
    Cover the skillet and cook on low for 3-5 minutes, until the cheese is melted and bubbly.

 

  • Garnish & Serve:
    Garnish with fresh cilantro, if desired, and serve hot!

  • For added flavor, try using spicy taco seasoning or adding chopped jalapeños.
  • You can substitute ground turkey or chicken for the beef if you prefer a leaner option.
