Description

Ingredients

  1. 1 pound large shrimp, peeled and deveined
  2. 1 tablespoon olive oil
  3. Salt and pepper to taste
  4. 8 ounces linguine pasta
  5. 4 tablespoons butter
  6. 4 cloves garlic, minced
  7. 1/2 cup chicken broth
  8. Juice of 1 lemon
  9. 1 teaspoon red pepper flakes
  10. 1/4 cup grated Parmesan cheese
  11. 2 tablespoons freshly chopped parsley
  12. Lemon slices, for garnish

Instructions

  • Season the shrimp with salt and pepper.
  • Heat olive oil in a large skillet over medium heat. Add the shrimp and cook until pink and opaque, about 2 minutes per side. Remove the shrimp from the skillet and set aside.
  • In the same skillet, melt the butter. Add the minced garlic and sauté for 1 minute until fragrant.
  • Pour in the chicken broth, lemon juice, and red pepper flakes. Bring to a simmer and cook until the sauce reduces by half, about 3 minutes.
  • Cook the linguine pasta according to package instructions. Drain and add to the skillet with the sauce. Toss to coat the pasta in the sauce.
  • Add the cooked shrimp back to the skillet and toss everything together. Cook for an additional minute, until heated through.
  • Serve the shrimp scampi linguine with a garnish of grated Parmesan cheese, chopped parsley, and lemon slices.

Notes

  • Be careful not to overcook the shrimp; they should be pink and opaque but tender.
  • If you prefer a spicier version, feel free to add more red pepper flakes.
