- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- Salt and pepper to taste
- 8 ounces linguine pasta
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- Juice of 1 lemon
- 1 teaspoon red pepper flakes
- 1/4 cup grated Parmesan cheese
- 2 tablespoons freshly chopped parsley
- Lemon slices, for garnish
Instructions
- Season the shrimp with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Add the shrimp and cook until pink and opaque, about 2 minutes per side. Remove the shrimp from the skillet and set aside.
- In the same skillet, melt the butter. Add the minced garlic and sauté for 1 minute until fragrant.
- Pour in the chicken broth, lemon juice, and red pepper flakes. Bring to a simmer and cook until the sauce reduces by half, about 3 minutes.
- Cook the linguine pasta according to package instructions. Drain and add to the skillet with the sauce. Toss to coat the pasta in the sauce.
- Add the cooked shrimp back to the skillet and toss everything together. Cook for an additional minute, until heated through.
- Serve the shrimp scampi linguine with a garnish of grated Parmesan cheese, chopped parsley, and lemon slices.
Notes
- Be careful not to overcook the shrimp; they should be pink and opaque but tender.
- If you prefer a spicier version, feel free to add more red pepper flakes.
