1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
Salt and pepper to taste
8 ounces linguine pasta
4 tablespoons butter
4 cloves garlic, minced
1/2 cup chicken broth
Juice of 1 lemon
1 teaspoon red pepper flakes
1/4 cup grated Parmesan cheese
2 tablespoons freshly chopped parsley
Lemon slices, for garnish
Instructions
Season the shrimp with salt and pepper.
Heat olive oil in a large skillet over medium heat. Add the shrimp and cook until pink and opaque, about 2 minutes per side. Remove the shrimp from the skillet and set aside.
In the same skillet, melt the butter. Add the minced garlic and sauté for 1 minute until fragrant.
Pour in the chicken broth, lemon juice, and red pepper flakes. Bring to a simmer and cook until the sauce reduces by half, about 3 minutes.
Cook the linguine pasta according to package instructions. Drain and add to the skillet with the sauce. Toss to coat the pasta in the sauce.
Add the cooked shrimp back to the skillet and toss everything together. Cook for an additional minute, until heated through.
Serve the shrimp scampi linguine with a garnish of grated Parmesan cheese, chopped parsley, and lemon slices.
Notes
Be careful not to overcook the shrimp; they should be pink and opaque but tender.
If you prefer a spicier version, feel free to add more red pepper flakes.
