Description

Ingredients

  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup (4 ounces) grated sharp cheddar cheese
  • 2 teaspoons chopped fresh thyme or rosemary
  • Freshly ground pepper

Instructions

  1. In a medium saucepan, bring water, butter, and salt to a boil over high heat.
  2. Reduce heat to medium, add flour all at once, and stir rapidly until dough forms a ball.
  3. Remove from heat, cool for 2 minutes, then add eggs one at a time, mixing fully after each addition.
  4. Stir in cheese, thyme, and pepper.
  5. Drop tablespoon-sized dough balls onto a lined baking sheet, spaced 1 inch apart.
  6. Bake at 425°F for 10 minutes, then reduce heat to 350°F and bake for 15-20 more minutes until golden.
