- 1/2 teaspoon salt
- 1 cup all-purpose flour
- 4 large eggs
- 1 cup (4 ounces) grated sharp cheddar cheese
- 2 teaspoons chopped fresh thyme or rosemary
- Freshly ground pepper
Instructions
- In a medium saucepan, bring water, butter, and salt to a boil over high heat.
- Reduce heat to medium, add flour all at once, and stir rapidly until dough forms a ball.
- Remove from heat, cool for 2 minutes, then add eggs one at a time, mixing fully after each addition.
- Stir in cheese, thyme, and pepper.
- Drop tablespoon-sized dough balls onto a lined baking sheet, spaced 1 inch apart.
- Bake at 425°F for 10 minutes, then reduce heat to 350°F and bake for 15-20 more minutes until golden.
