3 cups diced potatoes
2 cups chopped broccoli
1/2 cup diced onion
2 cloves garlic, minced
2 tbsp butter
4 cups chicken or veggie broth
1 cup heavy cream
2 cups shredded cheddar cheese
Salt & pepper to taste
In a pot, sauté diced onion and minced garlic in butter until soft and fragrant.
Add diced potatoes and broth, and simmer until the potatoes are soft, about 10-12 minutes.
Add chopped broccoli and cook for an additional 5-7 minutes, or until the broccoli is tender.
