This Cheddar Broccoli Potato Soup is a comforting bowl of creamy potatoes, sharp cheddar cheese, and tender broccoli. The perfect combination for chilly days or cozy dinners. A rich, thick soup that’s satisfying and soul-warming!

Ingredients

  1. 3 cups diced potatoes

  2. 2 cups chopped broccoli

  3. 1/2 cup diced onion

  4. 2 cloves garlic, minced

  5. 2 tbsp butter

  6. 4 cups chicken or veggie broth

  7. 1 cup heavy cream

  8. 2 cups shredded cheddar cheese

  9. Salt & pepper to taste

Instructions

  • In a pot, sauté diced onion and minced garlic in butter until soft and fragrant.

  • Add diced potatoes and broth, and simmer until the potatoes are soft, about 10-12 minutes.

  • Add chopped broccoli and cook for an additional 5-7 minutes, or until the broccoli is tender.

  • Stir in heavy cream and shredded cheddar cheese until melted and smooth.

  • Season with salt and pepper to taste.

  • For a thicker soup, you can mash some of the potatoes or blend a portion of the soup for a creamier texture.
