Description

Cha Cha’s White Chicken Chili is a creamy, spicy chili made with white beans, green chiles, jalapeños, and tender chicken breast, perfect for a comforting and hearty meal.


Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 (4 ounce) can diced jalapeno peppers
  • 1 (4 ounce) can chopped green chile peppers
  • 3 cloves garlic, crushed
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cayenne pepper
  • 3 (15 ounce) cans white beans, drained
  • 2 (14.5 ounce) cans chicken broth
  • 3 cups chopped cooked chicken breast
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened.
  2. Stir in the diced jalapeno peppers, chopped green chile peppers, crushed garlic, ground cumin, dried oregano, and cayenne pepper. Cook for another 2 minutes, stirring occasionally.
  3. Add the white beans and chicken broth to the pot. Bring the mixture to a simmer and cook for 10 minutes to allow the flavors to meld.
  4. Stir in the chopped cooked chicken breast and cook for another 5 minutes until the chicken is heated through.
  5. Remove the pot from heat and stir in the shredded Monterey Jack cheese until melted and incorporated.
  6. Serve hot, and enjoy this spicy, creamy chili!

Notes

  • You can adjust the level of cayenne pepper to control spiciness.
  • Leftovers can be stored in the refrigerator for up to 3 days.
