Cha Cha’s White Chicken Chili is a creamy, spicy chili made with white beans, green chiles, jalapeños, and tender chicken breast, perfect for a comforting and hearty meal.

- 1 tablespoon vegetable oil
- 1 onion, chopped
- 1 (4 ounce) can diced jalapeno peppers
- 1 (4 ounce) can chopped green chile peppers
- 3 cloves garlic, crushed
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon ground cayenne pepper
- 3 (15 ounce) cans white beans, drained
- 2 (14.5 ounce) cans chicken broth
- 3 cups chopped cooked chicken breast
- 1 cup shredded Monterey Jack cheese
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened.
- Stir in the diced jalapeno peppers, chopped green chile peppers, crushed garlic, ground cumin, dried oregano, and cayenne pepper. Cook for another 2 minutes, stirring occasionally.
- Add the white beans and chicken broth to the pot. Bring the mixture to a simmer and cook for 10 minutes to allow the flavors to meld.
- Stir in the chopped cooked chicken breast and cook for another 5 minutes until the chicken is heated through.
- Remove the pot from heat and stir in the shredded Monterey Jack cheese until melted and incorporated.
- Serve hot, and enjoy this spicy, creamy chili!

- You can adjust the level of cayenne pepper to control spiciness.
- Leftovers can be stored in the refrigerator for up to 3 days.
