Instructions
- Cook the Carrots:
Bring a pot of water to a boil and add the chopped carrots. Cook until very soft (about 15-20 minutes). Drain well. Puree the carrots using a food processor, blender, or hand mixer until smooth. - Make the Soufflé Batter:
Preheat oven to 350°F (175°C) and grease a 1.5-quart baking dish or soufflé dish. In a bowl, whisk together pureed carrots, melted butter, eggs, sugar, flour, baking powder, salt, vanilla, and cinnamon until smooth and fluffy. - Bake the Soufflé:
Pour the mixture into the prepared baking dish. Bake for 40-45 minutes, or until puffed and golden brown. A toothpick inserted should come out clean. - Serve & Enjoy:
