  1. 1 lb (about 45) carrots, peeled and chopped
  2. ½ cup (1 stick) unsalted butter, melted
  3. 3 large eggs
  4. ½ cup granulated sugar
  5. ¼ cup all-purpose flour
  6. 1 tsp baking powder
  7. ½ tsp salt
  8. 1 tsp vanilla extract
  9. ½ tsp cinnamon (optional, for warmth)
  10. Powdered sugar (for dusting, optional)

Instructions

  • Cook the Carrots:
    Bring a pot of water to a boil and add the chopped carrots. Cook until very soft (about 15-20 minutes). Drain well. Puree the carrots using a food processor, blender, or hand mixer until smooth.
  • Make the Soufflé Batter:
    Preheat oven to 350°F (175°C) and grease a 1.5-quart baking dish or soufflé dish. In a bowl, whisk together pureed carrots, melted butter, eggs, sugar, flour, baking powder, salt, vanilla, and cinnamon until smooth and fluffy.
  • Bake the Soufflé:
    Pour the mixture into the prepared baking dish. Bake for 40-45 minutes, or until puffed and golden brown. A toothpick inserted should come out clean.
  • Serve & Enjoy:
    Dust with powdered sugar before serving for a little extra sweetness. Serve warm as a side dish or light dessert.
