Description

Deliciously soft caramel cheesecake cookies featuring a buttery cookie dough exterior wrapped around a creamy cheesecake filling, topped with luscious caramel sauce and a sprinkle of flaky sea salt for the perfect sweet and salty bite.


Ingredients

  • ½ cup (115g) unsalted butter, softened
  • ½ cup (100g) brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup (125g) all-purpose flour
  • ¼ tsp baking soda
  • A pinch of salt
  • 4 oz (113g) cream cheese, softened
  • ¼ cup (50g) powdered sugar
  • ¼ tsp vanilla extract (for filling)
  • ¼ cup (60ml) store-bought or homemade caramel sauce
  • A generous pinch of flaky sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until fully combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to wet mixture, stirring until a soft dough forms.
  6. In another bowl, mix softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy; set aside.
  7. Scoop tablespoon-sized balls of cookie dough and flatten into small discs.
  8. Place a spoonful of cheesecake filling in the center of each disc, fold dough around it, seal well, and roll into balls.
  9. Place balls on prepared baking sheet and bake for 12–14 minutes, until edges are lightly golden but centers remain soft.
  10. Allow cookies to cool completely on the baking sheet.
  11. Drizzle warm caramel sauce over each cooled cookie and sprinkle with flaky sea salt.
