    Spices:

    • Ground cinnamon: 1/2 teaspoon, heaping; for a warm flavor.
    • Ground nutmeg: 1/4 teaspoon; subtle spice enhancement.

Instructions

  • Cook the Apples:
    • In a large stockpot, combine the diced apples, water, and butter.
    • Cook and stir over low heat for about 10 minutes, or until the apples are tender.
  • Add Pectin:
    • Stir in the pectin and bring the mixture to a rolling boil, stirring constantly.
  • Incorporate Sugars and Spices:
    • Add granulated sugar, brown sugar, cinnamon, and nutmeg.
    • Return the mixture to a rolling boil and boil for 1 minute, stirring constantly.
  • Prepare Jars:
    • Remove from heat and skim off any foam.
    • Carefully ladle the hot jam into hot, sterilized half-pint or pint jars, leaving a 1/4-inch headspace.
    • Remove air bubbles, wipe rims, and adjust lids.
  • Process Jars:
    • Process jars in a boiling water bath for 10 minutes.
  • Cool and Store:
