Description

Cajun Corn On The Cob is a flavorful and spicy dish, with corn roasted in an oil-spice mixture and topped with a creamy mayo sauce, cheese, cilantro, and lime for a delicious kick.


Ingredients

  • 4 ears of corn, husked
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 4 tbsp mayonnaise (vegan mayo works)
  • ⅓ cup sour cream or Mexican crema
  • 1 ½ tsp cajun spice
  • 1 ½ tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp cilantro, chopped
  • ½ cup feta or cotija cheese, crumbled
  • 1 tbsp lime juice
  • 1 tsp chipotle or chili powder (optional)

Instructions

  1. Prepare oil and spice mixture: In a small bowl, whisk together olive oil, half of the cajun spice, half of the paprika, garlic powder, onion powder, salt, and pepper. You may have leftover oil-spice mixture, which can be used to brush on the corn later.
  2. Prepare corn: Place each cob on a piece of foil and brush generously with the oil-spice mixture. Wrap each cob in foil.
  3. Bake: Transfer the wrapped corn to the oven and bake at 425°F for 30 minutes. If you prefer softer corn, after 30 minutes, brush with more oil-spice mixture and bake for another 20-25 minutes.
  4. Make the mayo sauce: In a medium bowl, mix mayonnaise, sour cream, the remaining cajun and paprika spices, lime juice (or squeeze it later on the corn), salt, and pepper to taste.
  5. Finishing touches: Once the corn is done, let it cool slightly. Brush with any leftover oil-spice mixture (optional), then coat generously with the mayo sauce.
  6. For a charred effect without a grill, transfer the corn to a lightly greased grill pan and cook until the desired char is reached.
  7. Top and serve: Sprinkle with crumbled feta or cotija cheese, chopped cilantro, and extra cajun spice. Serve warm and enjoy!

Notes

  • If you want extra heat, feel free to add more chipotle or chili powder to the mayo sauce.
  • Grilling the corn instead of baking will give it a more authentic charred flavor.
  • If you prefer a vegan version, use vegan mayo and omit the feta or cotija cheese or substitute with a dairy-free option.
