  • ¼ teaspoon oregano
  • ¼ teaspoon thyme
  • ¼ teaspoon salt

Main Ingredients

  • 4 small chicken breasts
  • 2 small bell peppers, thinly sliced (or mini sweet peppers)
  • 4 cloves garlic, minced
  • 6 oz cream cheese, cold and sliced into 8 pieces
  • ½ cup shredded cheddar cheese

Instructions

Prepare the Cajun Seasoning

  1. In a small bowl, mix together paprika, cayenne pepper, oregano, thyme, and salt to create the Cajun spice blend.

Cook the Chicken and Peppers

  1. Season the chicken breasts evenly with the Cajun seasoning on both sides.
  2. In a large skillet over medium heat, sauté the sliced bell peppers and minced garlic until fragrant and tender. Remove from the skillet and set aside.
  3. In the same skillet, cook the seasoned chicken breasts for 4–5 minutes per side, or until golden and nearly cooked through.

Add Cheese and Finish

  1. Top each chicken breast with two slices of cream cheese and sprinkle with cheddar cheese.
  2. Cover the skillet with a lid and cook for another 3–5 minutes, until the cheese is melted and the chicken is fully cooked.
  3. Top the chicken with the sautéed bell peppers and serve warm.

Notes

  • You can use store-bought Cajun seasoning, but this homemade version gives full control over the spice level.
  • For extra creaminess, stir any leftover cream cheese into the skillet juices to make a quick sauce.
