Ingredients

Scale
  1. 1 lb ground beef or sausage (or a mix of both)
  2. 1 medium onion, diced
  3. 1 bell pepper, diced (green or red)
  4. 3 cloves garlic, minced
  5. 1 medium head of cabbage, chopped
  6. 1 (14.5 oz) can diced tomatoes
  7. 1 cup cooked white rice
  8. 1 ½ teaspoons Cajun seasoning
  9. ½ teaspoon smoked paprika
  10. ½ teaspoon salt (adjust to taste)
  11. ½ teaspoon black pepper
  12. ½ teaspoon dried oregano
  13. ½ teaspoon dried thyme
  14. 1 cup chicken or beef broth (for extra moisture)
  15. 1 tablespoon olive

Instructions

  • Brown the Meat
Heat 1 tbsp olive oil in a large skillet or pot over medium heat. Add ground beef or sausage and cook until browned, breaking it up with a spoon.

  • Sauté the Vegetables
Add onion, bell pepper, and garlic to the meat. Cook for 3-4 minutes until softened and fragrant.

  • Add the Cabbage & Seasonings
Stir in chopped cabbage and mix well. Add Cajun seasoning, smoked paprika, salt, black pepper, oregano, and thyme. Pour in diced tomatoes (with juices) and 1 cup broth. Stir well and cover. Simmer for 15-20 minutes, stirring occasionally, until cabbage is tender.

  • Add the Rice & Serve
Stir in cooked white rice and mix everything together. Taste and adjust seasoning if needed. Let it cook for another 2-3 minutes, then serve hot!
