- 1 lb ground beef or sausage (or a mix of both)
- 1 medium onion, diced
- 1 bell pepper, diced (green or red)
- 3 cloves garlic, minced
- 1 medium head of cabbage, chopped
- 1 (14.5 oz) can diced tomatoes
- 1 cup cooked white rice
- 1 ½ teaspoons Cajun seasoning
- ½ teaspoon smoked paprika
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- 1 cup chicken or beef broth (for extra moisture)
- 1 tablespoon olive oil
Instructions
- Heat 1 tablespoon of olive oil in a large skillet or pot over medium heat.
- Add ground beef or sausage and cook until browned, breaking it up with a spoon.
- Add diced onion, bell pepper, and garlic to the meat. Cook for 3-4 minutes until softened and fragrant.
- Stir in chopped cabbage and mix well.
- Add Cajun seasoning, smoked paprika, salt, black pepper, oregano, and thyme.
- Pour in diced tomatoes (with juices) and 1 cup of broth. Stir well and cover.
- Simmer for 15-20 minutes, stirring occasionally, until cabbage is tender.
- Stir in cooked white rice and mix everything together. Taste and adjust seasoning if needed.
- Let it cook for another 2-3 minutes, then serve hot!
Notes
- This dish can be made with either ground beef, sausage, or a mix of both depending on your preference.
- If you’d like it spicier, increase the amount of Cajun seasoning or add some hot sauce.
- For a low-carb version, you can omit the rice and substitute with cauliflower rice.
- Great for meal prep! Leftovers store well in the fridge for 3-4 days.
