Ingredients

  • 1 lb ground beef or sausage (or a mix of both)
  • 1 medium onion, diced
  • 1 bell pepper, diced (green or red)
  • 3 cloves garlic, minced
  • 1 medium head of cabbage, chopped
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup cooked white rice
  • 1 ½ teaspoons Cajun seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 cup chicken or beef broth (for extra moisture)
  • 1 tablespoon olive oil

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet or pot over medium heat.
  2. Add ground beef or sausage and cook until browned, breaking it up with a spoon.
  3. Add diced onion, bell pepper, and garlic to the meat. Cook for 3-4 minutes until softened and fragrant.
  4. Stir in chopped cabbage and mix well.
  5. Add Cajun seasoning, smoked paprika, salt, black pepper, oregano, and thyme.
  6. Pour in diced tomatoes (with juices) and 1 cup of broth. Stir well and cover.
  7. Simmer for 15-20 minutes, stirring occasionally, until cabbage is tender.
  8. Stir in cooked white rice and mix everything together. Taste and adjust seasoning if needed.
  9. Let it cook for another 2-3 minutes, then serve hot!

Notes

  • This dish can be made with either ground beef, sausage, or a mix of both depending on your preference.
  • If you’d like it spicier, increase the amount of Cajun seasoning or add some hot sauce.
  • For a low-carb version, you can omit the rice and substitute with cauliflower rice.
